Chili con carne with chorizo
Ingredients (for 6 people):
1 bag of bacon
1 sweet chorizo
500 g of minced meat
1 red pepper
1 yellow pepper
2 cloves of garlic
300 g of beans dry reds (I prefer and do not dip them in water I like them to crunch lightly)
70 g of tomato paste
25 cl water
- 1 tablespoon paprika
- 2 teaspoons chili puree
Fry bacon and chopped onions in a frying pan. Add the slices of chorizo (without the skin).
Then reserve in a cast iron casserole on low heat.
Fry in a little olive oil, the pieces of peppers cut into coarse dice. Add then to the first casserole.
Brown the ground meat with crushed garlic in a drizzle of olive oil. Salt and pepper. Add to the stew.
In the stew pot, always over low heat, add the red beans, the tomato paste, the paprika, the chili purée, the water and the parsley.
Simmer, stirring occasionally.
Cook 45 to 60 min. The sauce should not be too liquid (open the lid to allow it to evaporate, if necessary).
Add chili puree, according to your taste
